There are a variety of special trolleys manufactured for F&B Service. A hotel or restaurant may have one or a few of these according to its needs and spending capacity. The following top 07 types of trolleys are worth mentioning and not to be missed!

Hors-d’oeuvre Trolley

1. Hors-d’oeuvre Trolley : The top should be fitted with a series of recesses for holding small rectangular dishes used for serving a variety of hors d’oeuvres.

2. Dessert Trolley : It has got three tiers – the top being covered by fiber-glass. The second tier can also be used for dessert if required. The bottom tier is used for the storage of cutlery and crockery.

3. Cheese Trolley : It has a variety of cheeses, cheese board, and cheese knife for cutting the cheese, and appropriate accompaniments for cheese. The surface of the trolley is normally in marble and has translucent dome to cover the top. Cheese selected by the guest is portioned and plated on the gueridon trolley, and then served to the guest from his or her right.

4. Wine Trolley : Wine service is important for its revenue potential. The wine trolley stocks and displays wines and spirits and is wheeled to the guest table to stimulate liquor sales. The trolley service is provided in gourmet restaurants and the person who provides this service is a qualified wine butler or sommelier.

5. Gueridon Trolley : A gueridon trolley or Flambé Trolley is a small mobile trolley that holds a portable heating unit called réchaud to serve flambéd dishes that can be placed alongside the guest‘s table. The trolley consists of one or two burners, a gas cylinder and work and storage, space for plates and cooking equipment.

6. Room Service Trolley : This trolley is known for its versatility. It is used for the service of a large order to guests in their rooms. The waiter sets up the meal and covers on the trolley and wheels it into the guest‘s room. This trolley may also be used as a dining table in the Privacy of the guest‘s room.

7. Carving Trolley : The trolley is usually silver-plated with large dome-like cover. This cover slides under the trolley so that the flat surface can be used to hold the meat. This surface is usually heated by spirits to keep the joint hot. There are usually two deep recesses to hold the gravy and sauce, while the bottom shelf accommodates plates for service.
